Crock Pot Fajitas

Here's how it looked before it started cooking.

I love cooking in my crock pot and I love fajitas.  So, when I came across a recipe for Crock Pot Fajitas...well, let's just say that I was one happy mommy. Last week, we had 'Meet The Teacher Night' and it was at a time where it was too early to feed the kids before we left. But, I knew that as soon as we got home, I'd have a very hungry family.  It made for the perfect opportunity to give this recipe a try. What's great about this recipe, is that you can make as little or as much as you would like.  I like to make extra, because I love to have left overs.  We easily had a little over 2 meals for our little family of 6, when I used the following:
  • 2 pounds of steak.  (I think I used flat iron steaks that were reduced price.  I love a good deal, don't you know?)
  • 1 chopped white onion
  • 2 large green bell peppers
  • half a jar of salsa
I threw it all in the crock pot and let it cook on high for 4 hours.  I served it on warm tortillas with cheese and sour cream.  It would also be good on a salad or however else you might like. It's very easy!  Let me know what you think if you give it a try.
