Friday Favorites

First up, I'm so excited that the kiddos and I kicked off our Spring Break today.  We have a little something fun planned for every day.  Having time off is going to be so nice.  We've had a much milder than normal winter this year, which means we haven't used any snow days.  The school year for us will end the second week of May.  I love that we'll have a little more summer break, but that means that all of the craziness that comes with the school year winding down will be in full force as soon as Spring Break is over. Just to clarify, it's a good craziness, it's just a lot of events and extra practices that makes us busier than normal. That's why it's so nice to have a week of a little more sleep and a little less busy before we go warp speed ahead.

This week, Evan and Mr. Stephen were given invitations to join the National Junior Honors Society.  I'm so proud of them both.  They will be inducted sometime in April.  Evan was also selected by his school to participate at a STEM contest in the advanced mathematics portion.  His team did not place in the contest, but the Teacher/Sponsor told me that she was very pleased with their performance.

Watching Addi rock it on the balance beam this week was another favorite.  Both Addi and Karsyn are preparing for their upcoming Gymnastics Showcase.  They have both made so much progress this year and it'll be fun to see how they do.

It's always a favorite when Karsyn is in my classroom.  She is so helpful in the mornings as I prepare for the day.

Oklahoma sunsets are another favorite and always beautiful.  We've had a week of breathtaking sunsets. I snapped this picture after taking Payton and Sarah to dance.  The girls telling me about their solos in their recital dance was also a favorite.  I loved seeing them so excited.

I think we can all agree that I'm no food photographer, but this has been my favorite meal this week.  I've had it several times.  I start with these pitas. They are low carb, high fiber and only have 60 calories! (I found them in the Wal-Mart bakery.)  I topped it with five slices of either thinly sliced turkey or ham lunch meat and then a slice of provolone cheese.  I broiled it in the oven until the cheese was melted and the meat was warm.  Then, I topped it with 2 tablespoons of this whipped Greek yogurt cream cheese combo.  (It was also found at Wal-Mart.)  I topped the cream cheese with several chopped green onions.  It's so good and it's under 250 calories!  Fresh fruit or veggie straws are great sides. =)
