I can't wait to find a few new recipes for our little family. Since the beginning of the year, we've been trying to eat healthier and to be more active. It's really starting to pay off, because as of today, I have lost 35.2 pounds!!! I still have a long way to reach my goal, but I feel more confident than ever that I can get to where I want to be.
Since we started focusing on our health, I've been doing whatever I can to avoid eating pizza. I just love it a little more than I should. The other day, I found this recipe for Zucchini Pizza Bites on Pinterest. I knew I had to give it a try and I am so glad that I did. I just love it. You start by slicing a zuchinni into thin slices. Put them in an oven that's been preheated to 425 F for around 5 minutes. (I put them in just long enough to make a "homemade" pizza for my kiddos.)
After a few minutes in the oven (I pop the pizza for the kiddos in the oven at this point,) I top the zucchini with pizza sauce, low fat pizza cheese, and a turkey pepperoni. I stick them back in the oven for around 10 minutes...until the cheese is bubbly and melted.
These Zucchini Pizza Bites are so good! I honestly like them as much as I like take out pizza. =)

ReplyDeleteI just made these for our family tonight. Rachel had just cheese, Sam had pepperoni, I had mushroom, and Dave and mushroom and pepperoni. Rachel ate three pieces and Sam ate four! It was definitely a hit and a delicious way to use up zucchini. Thanks for a yummy supper!!!
