The Weekend What

This post maybe could fall under Random Ramblin's.  But, since it's the weekend, we'll just stick with the what.  First off, I made this recipe from Pinterest.  Try it out!  It is sooooo yummy!  I made it Thursday evening and we've been enjoying it all weekend.  Take the first 4 ingredients and put them in your slow cooker for about 6 hours on low.  Shred the pork, stir and serve in corn tortillas.  They are yummy and low fat!  One serving is two tacos and it's only 326 calories.  


This Saturday, the kiddos and I were supposed to take a little road trip with Papa and Nana to Missouri.  We wanted to watch Jessi play soccer before Evan and Payton's games start for the season.  Unfortunately, we had bad weather on it's way and we decided that it was best not to travel. It ended up being a good thing, because I really needed to get caught up on some housework.  With soccer practice starting this week, it really hit me just how busy this Spring is going to be.  It was nice to have a day to get things nice and organized.  Saturday evening, the girlies decided they wanted their nails done.  I did the color and Payton did the sparkles.

We woke up this morning to a snow and ice mix. Jason had to work, so the kiddos and I decided to stay home from church.  I didn't want to get them out in this mess. This afternoon, we had a storm with sleet, ice, thunder and lightning.  It was very strange.  


And,  here's where things get random again. =) Karsyn and I love this yummy salad.  We've had it for lunch both days this weekend.  Shrimp sauteed in olive oil, feta cheese, garlic hummus, spinach, and croutons.  It's soooo good!!!!  


Aside from making delicious salads, the kiddos and I have had a pretty laid back day.  We've stayed in a our pajamas all day.  The kiddos played video games, school, colored, practice using scissors, and watched TV.

And spent more time than I'd like to admit day dreaming about the beach.  



Since we can't go on a big family beach vacation this summer, Jason and I have been talking a lot about taking a very scaled down, quick, weekend trip to the beach.  We'll see what we can work out.

  1. I am so jealous of your relaxing day at home! Of course, I am not envious of the yucky winter weather that caused it since we were enjoying some very beautiful weather here. Not to worry, we are in for another round of winter weather this week so we just had to soak up as much warmth as we could get for now. I really hope you guys can work out a little beach trip. We aren't doing a big vacation this year like we really wanted to do, but we have worked out a plan for a little Spring break trip and then our usual beach trip to SC. If we go ahead and book now, we get a great early booking discount that gets us a week for under $1K so it is a really good deal. I wish you all could come this way! :-)

    1. I'd LOVE to come your way! At some point, we are going to have to make that happen. You all are getting an awesome deal! Is your family going to get to go with you this year too? We'll have to go to a Texas beach if we go and they aren't nearly as beautiful as Florida. I'd just really love to get some ocean time in. We do have a fun trip planned to MO with our extended family, so we'll still get to have some vacation fun even if we don't get to go stick our toes in the sand.

  2. I hope you are able to at least take a weekend trip. You can make meals ahead of time...cookies, sandwiches, snacks...you can save a lot of money that way (as long as everyone is on board with the idea). There are also camping sites at a lot of beaches. : ) Love all these pictures.
